Picky toddlers…UGH. ?Unfortunately for me, I have one.

I?struggle the most with getting my two year old to eat vegetables and proteins on a daily basis. Seriously though, I swear my kid could just survive on fruit and carbs if I let him. Stick a piece of chicken or broccoli on his plate though, and he wants nothing to do with it. I have tried a variety of different tricks to try to get him to eat more veggies, and recently I started using popsicles. I started with making smoothies for Bennett, but some days he will drink them and others days he won’t. I discovered that if I give him a popsicle though, he will almost always eat it.

This is when I decided to make a pumpkin pie protein popsicle! Since we are going into the fall season and everything seems to be pumpkin flavored everywhere I look (I’m not complaining!) I decided to create a pumpkin flavored pop to get myself into the seasonal mood! (Its also still in the 80’s here in Georgia, so popsicles are still a great way to cool off right now!)

 

Pumpkin Pie Protein Popsicles

Servings: 8 popsicles (depending on the molds you use)

Popsicle Ingredients

  • 1 cup of Vanilla Greek Yogurt
  • 1 can of Pumpkin
  • 1 – 1/2 cups of carrot puree (you can also use carrot baby food!)
  • 1/4 cup of honey
  • 1/4 cup of milk (just enough to help the ingredients blend easily)
  • 1 Banana
  • Cinnamon to taste

Instructions

  1. Combine all ingredients in the blender and blend until smooth. Divide among popsicle molds.

  2. Run mold under warm water and gently remove popsicles. Wrap individually in freezer or parchment paper and store in an air-tight container or freezer bag. Enjoy!
