4 Ingredient Green Goddess Crockpot Chicken Bowls

March 18, 2019

Hey y’all! I have been meaning to post this recipe on my blog FOREVER and finally got the chance to do it! Let me start by saying that this is not my recipe. I originally found this recipe from Boys Ahoy (she’s a GENIUS) and ever since I found it, I literally make it every.single.week. This meal is super simple, only takes 4 ingredients, tastes great and is healthy! My favorite part is that it can be made ahead of time in the Crockpot, so I usually just throw all the ingredients together in the early afternoon, set my Crockpot for 4 hours and dinner is ready to go!

I have posted this a few times on my Instagram stories and I always get TONS of messages about it, so I figured it would be easier if I just posted the recipe onto my blog!

This isn’t a sponsored post, I actually do all of my grocery shopping at Trader Joe’s every single week. ?Trader Joe’s isn’t even that close to my house (its about 30 minutes away), but the amount of money we save every week on groceries by shopping there is ridiculous! The only problem with Trader Joe’s is that they will bring in a new product and then the next week it could be gone! I did write a post last year about all my Trader Joe favorites, if you want to check it out. I probably need to write a new one to make sure all the products are still available and also add in some of my new favorites!

This Green Goddess dressing from TJ’s is LIFE. You can find it in the refrigerated section of TJ’s near the salad kits and refrigerated produce. I have to be honest though, the first time I bought this dressing I didn’t like it. I think I was expecting it to be like the the creamy Green Goddess dressing that Kraft makes, so it didn’t go over so well with me when I first tried it. I started putting this dressing on eggs, cucumbers, carrots etc. though and now I am obsessed with it. It only has four ingredients, is fat free, dairy-free, sugar-free and has only 20 calories per two tablespoon servings.

4 Ingredient Green Goddess Crockpot Chicken Bowls

Ingredients

  • 3-4 Breasts Chicken
  • 1 Jar Trader Joe's Fire Roasted Yellow & Red Peppers
  • 1 Jar Trader Joe's Grilled Artichoke Halves
  • 1 Bottle Trader Joe's Green Goddess Dressing

Toppings of choice: I use shredded cheese, sour cream, and avocados on mine

    Instructions

    • Turn your slow cooker on either 4 or 6 hours (depending on how much time you have). Place your chicken breasts on the bottom of the slow cooker.
Drain the jar of artichokes and the jar of peppers. Lightly chop them up and put them on top of the chicken.
Dump the whole bottle of Green Goddess Dressing on the top, add the lid and cook for 4-6 hours.
After the 4-6 hours, shred the chicken with forks and stir with sauce, and you?re done! We like to put ours on top of brown rice or on top of cauliflower rice and then add some toppings!

It seriously can’t get any easier (or more delicious) than this. I hope you like them as much as I do and would love to know if you try to make them!
